Mashed black currant with sugar is tasty and healthy at any time of the year. In order to prepare it for the winter, it is not necessary to cook traditional jam. To make mashed berries, you only need black currant and sugar.

Instructions
Step 1
Before cooking black currant berries, sort out, rinse thoroughly and spread on a paper towel to dry. For storage, it is better to choose large, ripe berries. Be sure to pick off the leaves and twigs.
Step 2
Transfer the dried berries to a plastic or enamel container, add some of the sugar and mash with a wooden crush. You can use a meat grinder, but if the berry comes into contact with metal, some of the vitamin C will be destroyed.
Step 3
Add the remaining sugar to the finished mixture. If long-term storage at room temperature is planned, the amount of sugar must be increased by at least 0.5 kg. If storage is supposed to be in the refrigerator, 1.5-2 kg of sugar is enough.
Step 4
Leave the grated currants in a container, cover with a towel and keep in the refrigerator for 2-3 days, which will avoid fermentation during storage. During this time, the sugar will have time to completely dissolve. Do not forget that the berry must be stirred periodically. Leaving the berry at room temperature is not worth it, since the fermentation process may begin during settling. The taste will not be affected by this, but the shelf life will be significantly reduced.
Step 5
For packaging pureed currants, 500-750 ml cans are ideal. Before you put the berries in containers, the jars must be sterilized in any usual way. The easiest way to do this is in a double boiler or oven. Plastic lids should also be sterilized and dried.
Step 6
Put the finished jam in prepared dry jars. 3-4 centimeters should remain from the edges. This is necessary in order to add some more sugar on top. Usually a layer of 2 centimeters is sufficient.
Step 7
Cover the filled jars with plastic lids or wrap in paper, tying a rope around the neck. You can store such jam all winter. Blackcurrant rubbed with sugar retains all the beneficial properties. It contains vitamins A, B, C, E, K, R. Its main advantage is the strengthening of immunity. You can make such a jam from red currants, blueberries, raspberries, blueberries, strawberries and wild strawberries.
