Making homemade wine is a fun and easy process. It includes several stages, learning which you can make delicious and healthy wine. Observing a simple recipe and general principles of preparation, everyone can feel like a winemaker. Homemade wine is made from grapes, berries, fruits, jam and honey.
General principles of making wine
- To prepare wine, you must prepare clean, dry and non-metallic utensils. The best wine is made in oak barrels, but glass jars and bottles with airtight corks, enamel buckets are also suitable. Before use, dishes should be washed with hot water and soda, then rinsed with cold water and dried well.
- Raw materials for making wine must be fresh, of high quality, without damage and decay. To obtain juice from grapes, berries and fruits, you can use a meat grinder, softer berries can be kneaded with a pestle or hands.
- The optimum temperature for the fermentation process is 22-25 degrees.
- The quality of the wine depends on the quality of the juice obtained. The juice of grapes, apples and pears does not require additional processing. The juices of other berries and fruits are more acidic. In this case, they should increase the sugar content. Do not forget that excessive sugar content leads to a slow fermentation process.
- Berries and fruits are not washed before making wine, so as not to wash off the yeast from the skin of the fruit. If, after a week, after production, fermentation has not started, then you should add 1-2 g of baker's or brewer's yeast per 1 liter of juice.
- So that the wine is not cloudy and does not acquire bitterness, immediately after the end of the fermentation process, the wine should be carefully poured. Cork the bottles tightly and store in a cool dark place at a temperature not exceeding 15 degrees.
Homemade grape wine recipe
Ingredients:
- Grapes - 10 kg;
- Sugar - 0, 5 - 1 glass per 1 liter of juice.
Cooking method:
- The grapes are sorted out and unripe, spoiled and crumpled berries are removed. Then, to get juice, the berries are crushed (crumpled) with hands or a pestle.
- The resulting mass is placed in an enamel bowl, covered with a cloth and removed to a dark place for 2-3 days. Storage temperature 20-25 degrees. The wort obtained is mixed every day.
- As soon as a sour aroma and characteristic hiss of the fermentation process appears, the peel from the surface is collected and squeezed through cheesecloth. The resulting juice is added back to the container.
- Then all the juice is filtered 2-3 times through cheesecloth. Sugar is added at the rate of 200-250 g per liter of juice. The more sugar, the stronger the wine will be.
- Poured into a bottle or vessel in which the wine will ferment. Do not allow air to enter the container.
- A water seal is installed on the bottle, which consists of a tight cork and a hose coming from the lid and lowered into a container with water.
- The wine is left at a temperature of 22-26 degrees for 21 days.
- After 21 days, the wine is poured into bottles for storage. The resulting wine can be consumed in 40-45 days.
Homemade Blackcurrant Wine Recipe
Ingredients:
- Black currant - 3 kg;
- Sugar - 1 kg;
- Water - 3 liters.
Cooking method:
- The currants are sorted out and passed through a meat grinder.
- Wort and sugar syrup are poured into a prepared bottle. The syrup is prepared from 3 liters of boiled water and 1 kg of sugar, then cooled to 30 degrees.
- A medical glove should be put on the bottle and placed in a dark place. As soon as the glove is inflated, a puncture is made in it.
- The wine is infused for about 16 weeks at a temperature of 22-25 degrees.
- A dropped glove and no bubbles indicate that the wine is ready. It is poured into bottles and placed in storage and ripening.
Homemade apple wine recipe
Ingredients:
- Apples - 3 kg;
- Sugar - 1.5-2 kg;
- Water - 2 l;
- Cinnamon - 1 pinch
Cooking method:
- The apples are cut into slices, pitted and placed in a saucepan.
- Pour in water, add a little cinnamon and cook until cooked.
- Then the apples are ground through a sieve and left for three days to ferment.
