The pate can be used to prepare main dishes, snacks, and aromatic pastries can be cooked with it. For the preparation of pâté, the liver is most often used, less often game and meat. Vegetables, mushrooms and nuts are often added to liver pate.
Food preparation
To prepare the pate, you will need: 400 g of chicken liver, 150 g of pumpkin, 100 g of butter, 1 orange, 1 onion, 1 tbsp. l. olive oil, 1 carrot, 1 tsp. mixture of peppers, 1/4 tsp. nutmeg, 1 tsp. salt.
Preparation
To make chicken liver pate with pumpkin, take the offal and rinse it thoroughly under running water. Next, cut the liver into medium pieces and fry in olive oil over medium heat for 7-10 minutes. Place the sautéed liver in a bowl.
Peel the onions, carrots and pumpkin, cut the vegetables into cubes. Put them in the same pan in which you cooked the liver, add 20 g of butter to the vegetables. Cook for 12 minutes over medium heat. Next, put the liver in a frying pan, pour the ingredients with freshly squeezed orange juice. Simmer for 2-3 minutes, then remove from heat.
Place the liver and vegetables in a blender bowl, add the required amount of spices and salt to them, grind the food until smooth. Put the remaining 80 g of butter in a separate saucepan and melt over low heat.
Take the molds and put the cooked chicken pate in them, pour melted butter on top. Put the dish in the refrigerator for 2-3 hours.
