Salmon with curry sauce
- fillet of sea salmon - 400 g;
- lemon juice - 60 ml.;
- apple - 50 g.;
- mixture "Curry" - 5 g;
- wheat beer - 150 ml.;
- meat broth - 60 ml.;
- cream 15% - 70 ml.;
- onions - 60 g;
- wheat flour 10 g;
- salt - 5 g;
- pepper - 3 g.;
- vegetable oil - 40 g.
The skinless salmon fillets will need to be washed and dried, then cut into slices or cubes and placed in a saucepan. Season the fish with salt, pepper, sprinkle with half the lemon juice and let it brew for 30 minutes under the lid. The onion must be peeled and cut into small cubes, the apple must be washed, peeled, and the core removed from it, then it must be cut into small cubes too and poured with the remaining lemon juice.
Fry the onions in vegetable oil until cooked, add the "Curry" mixture and let it dissolve in hot oil for 2-3 minutes over low heat, then add the prepared apple to the onion.
The ready-made onion and apple are chopped in a blender, put into a frying pan, wheat beer and broth are added to this mixture and brought to a boil. Then you should reduce the heat, carefully put the pieces of salmon in the pan and continue to simmer for 10 minutes.
Cream should be mixed with flour, gradually adding them to it and stirring thoroughly so that there is no formation of lumps, and add to the sauce with fish. You can serve salmon as an appetizer or as a separate dish with a side dish.
Smoked eel with dark beer sauce
smoked eel - 700g.;
dark beer - 500 ml.;
bay leaf - 1 pc.;
lemon - 2 slices;
onions - 60 g;
butter - 1 5 g.;
salt - 7 g;
black pepper - 5 g.;
egg yolk - 1 pc.;
starch - 10 g;
milk - 125 ml.
It is necessary to remove the skin from the blackhead and remove the ridge. Rinse the fillet and cut into 4-5 cm pieces. Peel the onions and cut them into thin rings. Pour beer into a saucepan, add prepared onion, salt, pepper, bay leaf, lemon and butter and bring to a boil.
Place the pieces of eel in a saucepan and cook for about 7-10 minutes until tender.
To prepare the dressing, you need to take egg yolk, starch and milk and combine them together. Gently add the resulting mixture to the sauce for the fish.
