    • Rabbit noodle soup:
    • - 500-800 g of rabbit meat;
    • - 1 onion;
    • - 2 cloves of garlic;
    • - 1 red bell pepper;
    • - 100 g green beans;
    • - 100 g of vermicelli;
    • - 0.5 glasses of dry white wine;
    • - 2 tbsp. l. olive oil;
    • - 1 tsp. dried basil;
    • - pepper
    • salt to taste.

Instructions

Step 1

Rabbit soup with rice Wash the rabbit meat in cold water and pat dry. Chop into 100-150 g portions. Fry the meat in a pan with a little butter over medium heat until browned.

Step 2

Chop the peeled onions into small cubes, grate the peeled carrots. Fry the vegetables lightly, then sprinkle them with flour and paprika to taste and save for another 2-3 minutes, stirring constantly.

Step 3

Pour the fried rabbit meat, onions and carrots with 2.5 liters of water. Instead of water, you can use vegetable broth, meat or chicken broth. Add peeled celery cuttings and a few peppercorns. Season with salt and bring to a boil. Remove the formed foam from the surface. Reduce heat and simmer for about 1 hour at a low boil.

Step 4

Boil the rice separately until tender in lightly salted water. When the soup is ready, add the boiled rice. Stir, remove the pan from heat, cover and let the rabbit soup sit for 10-15 minutes. Pour into bowls, sprinkle with finely chopped herbs.

Step 5

Rabbit noodle soup Cut the rabbit meat into large pieces, wash and pour in 2 liters of cold water. Cook over low heat, skimming off the foam, about 1-1.5 hours. Then strain the broth through a fine sieve, separate the boiled meat from the bones and cut into small pieces if desired.

Step 6

Chop the onion and garlic. Heat olive oil in a frying pan, fry the onion and garlic until transparent. Pour in dry white wine and simmer until the liquid evaporates by half.

Step 7

Wash the red bell pepper, remove the seeds and cut into cubes. Add meat, onions and garlic, peppers and green beans to the broth. Bring to a boil, leave on low heat for 5-7 minutes. Then add thin noodles and cook for about 5 minutes more. After salt, add pepper to taste and serve immediately. For the soup, you can offer finely chopped herbs and sour cream.
