When you are tired of everyday soups, you can try making an unusual soup with rabbit and meatballs.
It is necessary
- For 8 servings you will need:
- - 1 rabbit weighing about 2.5 kilograms;
- - 2 medium onions;
- - 2 medium carrots;
- - 1 egg;
- - 300 grams of frozen corn;
- - 2 cloves of garlic;
- - 6 celery stalks;
- - 300 grams of frozen green peas;
- - 1 small bunch of basil;
- - 1 small bunch of parsley;
- - separately small leaves of basil for serving the finished dish;
- - ghee;
- - 4 tablespoons of bread crumbs;
- - salt;
- - ground black pepper;
Instructions
Step 1
Take the rabbit carcass and rinse thoroughly. Separate the meat from the bone. You don't need to be too careful, as the bones will be needed for the broth. Salt, pepper and wrap the rabbit meat. Set aside, let it soak a little.
Step 2
Take out a large saucepan, pour 3.5 liters of cold water into it and place the rabbit bones in it. Bring to a boil over high heat. Season with salt and reduce heat. Remember to skim the broth. Wash all vegetables. Coarsely chop 1 carrot, 1 onion and 3 celery stalks. Add all the ingredients to the saucepan. Cook for about 1, 5 hours, and then strain the broth, but do not discard the carrots and onions. You will need them for minced meat.
Step 3
Take a meat grinder and skip the boiled vegetables along with the rabbit meat and garlic. Add chopped parsley and basil, salt, pepper, 1 egg, 1 tablespoon ghee, and bread crumbs to the resulting minced meat. Roll the minced meat into small meatballs and refrigerate for about 30 minutes.
Step 4
Cut the remaining onion, celery and carrots into small cubes. Fry lightly in a skillet in ghee. Take a saucepan and pour 1, 6 liters of broth into it, bring to a boil. Add the frozen corn and peas as the broth comes to a boil. Boil over low heat for 7 minutes. Then salt and pepper and cover the pan. Remove from heat. Let the broth infuse a little.
Step 5
Bring the remaining broth to a boil. Remove the chilled meatballs and dip them one by one into the boiling broth. Cook without a lid for 10 minutes.
Step 6
Prepare deep bowls and place ready-made meatballs in them. Pour hot soup over them and garnish with small basil leaves. Your soup is ready. Bon Appetit!
