Greek Meatball Soup is a great main meal for the whole family. It is light, filling and has an unusual taste. To prepare it, you do not need exotic ingredients, all products can be found in the nearest store.

- • 500 g of minced meat;
- • 1 glass of rice;
- • 3 eggs;
- • 1 carrot;
- • 2 medium heads of onions;
- • 1 tbsp. flour;
- • 1 lemon;
- • 2 liters of water;
- • 2 tbsp. chopped parsley;
- • salt and black pepper;
- • vegetable oil for frying.
Instructions
Step 1
Peel and finely chop the onion, combine it with minced meat, 1 egg, rice, parsley, pepper, salt and 3 tablespoons of water. Mix the products well until a homogeneous mass is obtained, make small meatballs from them, no larger than a walnut. Before making the meatball soup, the rice should be soaked for 30 minutes in salted water.
Step 2
Finely chop the second onion, fry in a pan with a little oil. Grate the carrots on a coarse grater and add to the onion. Fry vegetables well, transfer them to a saucepan and pour 2 liters of hot water, put on fire.
Step 3
Once the water boils, gently add the meatballs and cook for 30 minutes. Make Lemon Egg Meatball Soup Dressing: Take 2 eggs and separate the yolks and whites, whisk them separately. Squeeze the juice out of the lemon and gently add it to the yolks. Pour this mixture into whites and gradually add the seeded flour. Stir the dressing gently to avoid lumps.
Step 4
Pour the lemon and egg mixture into the soup and leave the saucepan over low heat for 2 minutes. Before serving, the dish can be sprinkled with herbs and cheese. Some housewives, to make the soup more satisfying, add potatoes and cook the dish in pots in the oven.
