We will cook this soup with potatoes and grilled vegetables, as well as meatballs. In the soup according to this recipe, you can add any ingredients to your taste: rice, cereals, pasta, semolina, and so on, as well as vegetables: peppers, zucchini, eggplant, corn, beans or peas.

Small balls made from meat and boiled in broth are called meatballs. Minced meat for meatballs can be prepared from any meat: pork, beef, also chicken, turkey or fish, and even vegetables.

To make the meatball soup, you will need the following foods:

- potatoes - 2 pcs.;

- onions - 1 pc.;

- chicken egg - 1 pc.;

- carrots - 1 pc.;

- greens (parsley, onion or cilantro) - a bunch;

- minced chicken - 150 g;

- spices, salt, pepper - to taste;

- rice - 2 tbsp. l.

Making meatball soup

Wash the potatoes, peel and cut into small cubes, then boil along with finely grated carrots and pre-washed rice.

For this soup, you can use frozen vegetables such as carrots, as well as herbs. Frozen vegetables and herbs are very good for soups, especially in winter.

In the meantime, when the rice and vegetable broth boils, you can start preparing the base for the meatballs: take a deep plate, put in it the minced chicken or any other finely chopped greens, a little grated carrots and 1 teaspoon of rice. Also break the egg into the minced chicken and add the finely grated onions, add any spices, seasonings and salt, mix the minced meat well with your hands and form small meatballs.

Boil the meatballs in water, which will already begin to boil. If you put the meatballs in cold water, they can become soft.

Wait for the soup to boil and add a little salt. Continue cooking for about 45 minutes. Those who like hot soups can add grated garlic 10 minutes before cooking.

After the meatball soup is ready, turn off the stove and let the soup stand for a while. After a few minutes, the soup can be poured into bowls and served.
