Rice soup with meatballs is a delicious and nutritious dish that will appeal not only to adults, but also to children. True, its composition can be different. For example, buckwheat or peas are often used instead of rice. And also in the process of making meatball soup, you can do without potatoes.
To prepare rice soup with meatballs, prepare the following foods: 4-5 potato tubers, 2 small onions, half a cup of rice, 2 carrots, 400 g of meat or minced beef, a bunch of parsley and dill, 200 ml of vegetable or 150 g of butter, and also salt, depending on your taste.
Rinse the vegetables first and chop them. Carrots can be cut into slices and potatoes into small cubes. Also rinse the rice in cold water. Place a saucepan with 2 liters of water on the fire and wait until it boils. Add potatoes there and cook for 5-10 minutes over low heat. Then place the carrots in a saucepan and cook for another 5 minutes. As for rice, it will cook even faster than carrots. Therefore, it is best to put it in the pot later. Continue cooking, stirring occasionally. After adding the rice, slide the lid a little to prevent the soup from running out.
Be sure to salt the boiling water. Then the potatoes will boil more slowly.
If you are using a piece of meat, grind it along with the peeled onions. The task is greatly simplified if you bought ready-made minced meat. Only it shouldn't be watery. If you made minced meat yourself, knead it well with a fork, and then with your hands. It should stick well. This ensures that the meatballs in your soup don't fall apart.
Shape the minced meat into small balls. You can stick them as much as you want. Dip the meatballs into the soup and reduce the heat slightly. Remove the resulting foam from the surface and cook until tender. Wait until the meatballs come up. Add chopped herbs and after 3-4 minutes remove the pan from the stove.
Put a little butter or vegetable oil in the soup shortly before cooking, so that the broth is rich. Optionally, you can make rice soup with meatballs and egg dressing, but no potatoes. To create such an original dish, you will need: 3 chicken eggs, half a glass of rice, 2 onions, 3 carrots, 500 g of ground beef, lemon, 3 tbsp. l. olive oil, 1 tbsp. l. flour, 1.5 liters of water, as well as salt and spices to taste.
For the soup, it is better to choose round grain rice, as it cooks faster.
Peel and chop the onion. In a bowl deep enough, combine the raw rice, minced meat, onion, spices, beaten egg, and a few tablespoons of water. Form into small meatballs.
Fry the remaining chopped onion in olive oil. Grind the carrots on a grater and fry them for about 10 minutes, and then transfer the vegetables to the pan with water and bring to a boil. Season with salt to taste. Then add the meatballs. After 30 minutes, pour the dressing into the soup. By the way, to prepare the dressing, you will need to beat the whites and yolks separately. After that, the lemon juice is mixed with the yolks and whites. Also, add a small amount of flour to the dressing and mix everything thoroughly. After adding the dressing, the soup can be considered almost ready. Don't forget to sprinkle it with chopped herbs before serving.
