He oversaw the work of Russian colleagues who were preparing salad. As they poured vinegar on the salad, the Frenchman asked: "Vinegar?" Translated from French, it means "wine vinegar". The benefits of vinaigrette

The composition of the vinaigrette traditionally includes such familiar vegetables as carrots, beets, potatoes, cucumbers, onions. Each of them is incredibly healthy because is a source of various vitamins and minerals. Thanks to this, vinaigrette is considered to be an excellent dish suitable for a dietary and balanced diet.

A positive point in the preparation of this salad is that all vegetables are boiled directly in the peel. Thanks to this, they retain the bulk of their nutrients and vitamins.

Despite the enormous benefits of the vinaigrette, its calorie content is relatively low. It is about 130-150 kcal per 100 g of ready-made salad. You can determine the exact number of calories in a salad using special tables. Do not forget that potatoes are more nutritious than other ingredients, so keep a close eye on how many potatoes you crumble into a vinaigrette. By changing at your discretion the number of constituent vegetables, you can reduce or increase the nutritional value of the dish.

Vinaigrette recipe

To prepare a salad, take 2-3 pieces of beets, 1 onion, 5-6 potatoes, 3 carrots, 400 g of sauerkraut, 2-3 pickled cucumbers, 1 can of green peas and vegetable oil to taste.

Boil beets, carrots and potatoes in a pot of water or in the microwave.

Beets can be baked in the oven. Prepared in this way, it is not only incredibly healthy, but also delicious.

Cook the salad in a deep china or enamel pot. Metal bowls are not suitable for these purposes, because vitamins, being oxidized, will be destroyed, and this will significantly reduce the benefits of the finished dish.

Finely chop the peeled boiled vegetables. The finer the ingredients are crumbled into a vinaigrette, the tastier it will be. Add small onion and cucumber cubes, squeezed sauerkraut and green peas to the dish. Season the salad with vegetable oil. Both sunflower and olive will do. However, if you decide to use vegetable salad as a part of your diet, then it is better to give preference to olive oil.
