Quick puff pastry with kefir

For cooking, you need the following ingredients:

- kefir - 250 ml;

- salt - a pinch;

- chicken egg - 1 pc.;

- butter (can be replaced with high-quality margarine) - 200 grams;

- wheat flour - 450 grams.

Take kefir, which should be at room temperature, and beat an egg into it and add salt. Mix the ingredients thoroughly, and then start adding flour in parts.

Cut the butter into thin slices. Dip them in flour and set aside. Take the dough and roll it into a layer. Place a third of the butter in the middle. Fold the dough in two layers and pinch the edges carefully. Then roll the layer out of it again. Place the second part of the butter in the middle, then fold into an envelope and pinch the edges. Do the same with the rest of the oil. Then fold the dough in several layers and roll it into a layer. Cut it into several pieces, wrap each of them with foil and put in the refrigerator. After 30 minutes, it can be used to make pies, croissants, samsa and other culinary delights.

Quick puff pastry on water

To prepare such a dough, you will need the following products:

- wheat flour (premium grade) - 3 glasses;

- butter - 150 g;

- water - 1 glass, - baking powder -1 tsp;

- salt - a pinch;

- sugar - 1 tbsp. the spoon.

Combine flour with sugar, salt, and baking powder. Add water to the ingredients. Knead a dense elastic dough on the basis of them, it should not stick to your hands. Place it on a floured table and then roll it out thinly. The thickness of the dough should not be more than 3 mm.

Melt the butter over low heat. Liberally grease the rolled dough with it, then roll it up and cut it in half. Lay one part on top of the second, it is necessary that the edges coincide. Take sheets of dough and roll into a roll. As a result, many layers will be immediately formed. Wrap the dough in plastic wrap and place in the freezer for 15 minutes. Then take it out and leave to cool for 5 minutes. Flatten the top of the dough and roll it out. Roll it up again. Now you can use it for baking. It will make not only excellent apple strudels, pies with potatoes and mushrooms, croissants with jam, but also other dishes.

You can use the puff pastry that remains after baking. Be sure to store it in a plastic bag in the freezer.
