Step 1
Rinse the rice, cover with water (water should be twice as much rice) and put on medium heat. After boiling, reduce heat and simmer for 20 minutes. Remember to stir constantly.
Step 2
Cut the cucumbers and cheese into thin strips. Boil the shrimp (dip them in boiling water and discard in a colander after 2 minutes).
Step 3
Combine rice vinegar with sugar and salt. Add 2 tablespoons of hot water and stir until the sugar and salt are completely dissolved. Pour the solution into hot rice and stir. Leave the rice to cool slightly.
Step 4
Place the nori sheet, smooth side down, on the wooden mat. Lay a layer of cooled rice so that there is about 2 centimeters of white space on top.
Step 5
Step back 2-3 centimeters from the bottom and add the filling (cheese, cucumbers, shrimp). Gently roll up a round elastic roll using a wooden napkin.
Step 6
Transfer the roll to a board and cut into pieces. Transfer to a plate and soak for 15-20 minutes. Serve with soy sauce.
