Packaging. Take a close look at the jar. Caviar must be made in accordance with GOST, no other technical specifications guarantee the quality of caviar. The dates of manufacture or packaging should be squeezed out on the inside of the can, and not glued to it or knocked out inside. And of course, caviar produced in Moscow or Nizhny Novgorod, and not in the Far East, should alert you. But most importantly, try not to buy caviar by weight in the markets. Here, no one guarantees either the quality of the products or the correct storage. And consequently, the risk of poisoning with such a product increases several times.

Structure. Read carefully the composition of the can of caviar. First of all, it should be clearly indicated what kind of fish this caviar is made from, for example, "pink salmon caviar" or "trout caviar". If the jar is transparent and you can see the eggs, remember that pink salmon caviar has a bright orange color, but trout has small red caviar. A large amount of liquid (sediment) indicates that the caviar has been defrosted and frozen several times. It is unlikely that it will please you with its quality. To figure this out, shake the can. If you hear a dull gurgling sound, do not take such caviar. Also pay attention to preservatives: E239 (or urotropin) has been banned in Russia since 2010.

Taste. Real caviar will never taste bitter, it does not smell like vegetable oil and does not have a pungent fishy odor. And to make sure of the quality, do an experiment: put a few eggs in a glass of water. Fake caviar will dissolve in the water.
