Step 1
Sift flour before kneading the dough. The point is not that it becomes clean and does not contain lumps and impurities. The point is to saturate it with air - this is how lightness and splendor is given to the dough.
Step 2
When mixing eggs and milk, they should be at room temperature. Therefore, the milk should be warmed up, and the eggs should be removed from the refrigerator in advance.
Step 3
First, beat eggs and milk mixed with sugar and salt - liquid ingredients. Then, little by little, add sifted flour into the resulting mixture. Stir the mixture continuously.
Step 4
Add a tablespoon of vegetable oil to the dough and mix thoroughly before baking the pancakes. This will make the dough more elastic and prevent the pancakes from sticking to the pan.
Step 5
The dough should not be too liquid, but it should not be thick either. In its consistency, a good pancake dough is like liquid sour cream.
