Liver balls in cheese baskets will delight guests and pets. In addition, the dish is an excellent cold appetizer. Preparing liver balls is quite simple. The specified amount of food is enough for 50 balls.

It is necessary

  • - veal liver - 500 g;
  • - milk - 300 ml;
  • - eggs - 5 pcs.;
  • - hard cheese - 300 g;
  • - butter - 100 g;
  • - carrots - 1 pc.;
  • - onions - 3 heads;
  • - salt - 0.5 tsp;
  • - ground black pepper - 0.5 tsp;
  • - vegetable oil - 3 tbsp. l.

Instructions

Step 1

Rinse the liver with water, dry, cover with milk and leave for 30-40 minutes.

Step 2

Then clean the liver from bile ducts and films, cut into small pieces and fry in vegetable oil until tender.

Step 3

Boil the carrots, peel, cut into large pieces. Hard boil the eggs. Peel, separate the whites from the yolks. Cut the onion into half rings and fry in vegetable oil until golden brown.

Step 4

Combine the fried liver, egg whites, boiled carrots, fried onions and mince (or grind with a blender). Stir. Add softened butter, salt and pepper to the liver-vegetable mass, mix.

Step 5

Rub the yolks on a fine grater. Air dry a little.

Step 6

From the liver-vegetable mass, form balls the size of a walnut. Roll each ball in the yolk on all sides.

Step 7

Grate the cheese on a coarse grater. Lay out 1-2 tbsp. l. grated cheese on a baking sheet lined with parchment (at a distance of about 6-7 cm from each other), place the baking sheet in an oven preheated to 180 degrees for 2-3 minutes to melt the cheese.

Step 8

Remove the hot cheesecakes from the baking sheet and place in small muffin tins (or other suitable containers). When the cheese has cooled, place the molds in the refrigerator. Place the liver balls in cheese baskets before serving. Garnish with fresh herbs. The dish is ready!
