How to prepare a duck carcass

The duck is a fat bird, so it does not need to be oiled; on the contrary, you need to get rid of excess fat by cutting it off from the back and in the neck area. The fat will soften the crust as a result of cooking, thus removing the desired crunch.

Another secret of crispy duck crust is pouring boiling water over the carcass. The duck needs to be poured very slowly with 2.5 liters of boiling water, but so that the water does not get inside. Then wipe the carcass dry with a clean towel, put it on the wire rack for half an hour and repeat the operation with another 2.5 liters of boiling water, which will close the pores on the duck skin, which will contribute to the formation of a crust.

Then comes the turn of salt and spices. The carcass should be grated with a tablespoon of salt and duck spices, which are sold in almost any store. After 30 minutes, you can proceed directly to baking, having previously made punctures with a toothpick in the fattest places so that excess fat flows out of the duck under the influence of temperature during cooking.

How to cook duck in the oven

The duck should only be placed in a preheated oven; on a baking sheet, it should lie breast-side down on the wire rack. In this case, the fat will drain quietly, and the duck will be baked until golden brown.

During the first hour, the duck must be baked at a temperature of 150C, then it must be increased to 170C and the duck must be left for another hour (or until tender). The last time, the temperature should be increased to 190C, and the duck should be turned over and left in the oven for another 20 minutes.
