Since then, I really wanted to cook these delicious donuts at home. And then I was lucky. The recipe for making St. Petersburg donuts was told to us by a friend. She had one of her distant relatives working in this most famous curvy. And she dictated to us the recipe for the famous donuts. The recipe uses water, but I replaced it with milk.
For the test you will need:
milk - 300 ml;
flour - 500 g;
dry yeast - 1 tbsp;
salt - half a teaspoon without a slide;
sugar - 1 tbsp. l.;
butter - 50-60 g;
eggs - 2 pcs.;
vegetable oil - for frying;
icing sugar for dusting.
1. Dissolve sugar and yeast in warm milk, and cover with a napkin, set aside in a warm place. As soon as the yeast dances in milk, break the eggs and add salt, melted butter and one tablespoon of vegetable. Stir everything well.
2. Add flour. The dough should turn out a little less often than you make for pies. The main thing is that you can tear off the pieces with your hands. The dough should be tender and not stick to your hands. To make it convenient to work with.
3. Put the dough in a warm place for half an hour. During this time, it will double in volume. We crush it and begin to tear off the balls and lay them on the board. As soon as the dough comes up again, make a kind of ring out of the balls. I make a hole in the middle and so form a ring. Again, we are waiting for the dough to come up a little.
And finally, the most crucial moment - we begin to bake donuts. We carefully put them in heated refined vegetable oil. Make it a slow fire, the crumpets should bake well. There should be enough oil so that the crumpets are immersed a little more than their half. Browned on one side, turn over to the other. Spread on a paper towel or napkin to remove excess oil, sprinkle with powdered sugar and tuck in both cheeks. The most delicious Petersburg crumpets when they are hot.
