It takes a lot of time to prepare rolls, because the work includes kneading dough and baking / frying food. But if you are thinking about what to bake for tea - yeast pie or rolls, choose the second. After all, when making a cake, you will have to wait for the dough to rise, and only then work with it. When forming rolls, you do not need to wait for the dough to come up, you can sculpt rounded blanks-rolls immediately after mixing all the ingredients for the dough.
In order for all family members to like dessert for tea, you should correctly choose a recipe for baking. It is believed that the most successful, both in taste and in consistency, are cottage cheese rolls. And if fresh homemade cottage cheese is used when kneading the dough, then the food turns out to be not only tasty, but also healthy.

Ingredients:
- 200 grams of cottage cheese;
- 150 grams of flour;
- 1 egg;
- 2 tablespoons of sugar;
- a pinch of salt;
- a teaspoon of baking powder;
- vegetable oil for frying.
Recipe:
Mix cottage cheese with egg and sugar. Pound these ingredients thoroughly into a soft and airy homogeneous mass.
Add salt, baking powder and flour to the mixture, knead the dough and roll it into a layer one centimeter thick. If, when rolling out the dough, it breaks (this may be the case if dry crumbly cottage cheese is used), add a tablespoon of any dairy product (milk, sour cream, yogurt or kefir) to the dough, stir and leave for a couple of minutes. Then repeat the rolling procedure.
Take two rounded cuttings with a diameter of five and four centimeters and cut out the rolls using molds. That is, first, using a larger shape from the dough, cut out the circles, then take a smaller mold and make holes in the previously cut circles. As a result, you should get smooth, rounded balls.
Pour oil into a frying pan and put on high heat. Fry the rolls on both sides until golden brown. Put the finished dessert on a plate lined with paper towels. Sprinkle with icing sugar before serving.

Kalachi cooked according to this recipe turns out to be very fluffy and soft. The advantage of this baking is that the dish has a rich curd taste, since a lot of curd is used, and a minimum amount of flour.

- 500 grams of cottage cheese;
- a glass of flour;
- ½ cup sugar;
- ¼ teaspoon of salt;
- a teaspoon of baking powder;
- 3 eggs.

When preparing rolls according to this recipe, the main thing is to correctly prepare the cottage cheese. You cannot use a curd mass or a curd product, since the dough will not work, well, or it will be very clogged, completely unsuitable for frying.
Take the dryest cottage cheese, place it in a sieve and put it under oppression overnight.
In a deep bowl, combine the cottage cheese with sugar, salt and eggs. Sift flour with baking powder. Combine the curd mixture with flour, mix thoroughly and leave for 10-15 minutes under the film (it is necessary for the dough to become more pliable due to the swelling of gluten).
Sprinkle the work surface with flour. Cut the dough into pieces the size of a chicken egg. Roll each piece into a sausage that is 15 centimeters long and two centimeters wide. Roll each workpiece into a ball and connect the edges (pinch them).
Pour vegetable oil into a frying pan or stewpan, put the dishes on fire. Fry all the rolls on both sides until golden brown. Roasting time - two to three minutes on each side.
Since the product is very high in calories, it is better to serve it with low-fat yogurt.

Oven-baked Kalachi are less high-calorie than fried ones (calorie content - 280-320 kcal per 100 grams of product, this is about one serving). Although the food cannot be called dietary, you can occasionally treat yourself to homemade cakes. The dough for rolls can be prepared on the basis of water, fermented baked milk, kefir, but the most delicious dessert for tea is when sour cream appeared in the recipe.
Ingredients:
- 400 grams of cottage cheese;
- 3 eggs;
- 2/3 cup sugar;
- a glass of sour cream;
- 200 grams of butter;
- 1/2 tsp salt;
- 3-4 cups flour;
- a bag of baking powder.
Step-by-step cooking recipe:
It should be noted right away that the recipe contains an approximate amount of flour that will be required to make rolls. The fact is that a lot depends on the fat content of the sour cream used and the consistency of the cottage cheese. If the sour cream is taken with a fat content of 20%, and the cottage cheese is dry and crumbly, then three glasses of flour will be enough, but if there is a lot of whey in the cottage cheese, and the fat content of sour cream is only 10%, then four glasses or a little more flour will have to be spent.
So, put the cottage cheese in a deep bowl, add eggs, sugar and salt, rub everything thoroughly with a fork. Melt the butter, cool it down. Pour butter into the egg mass, add sour cream and whisk everything.
Mix the baking powder with three cups of flour, sift these ingredients two to three times. If you want to give the rolls a more interesting taste, at this stage you can add flavor enhancers to the flour, for example, cinnamon, vanillin, nutmeg, or more.
Mix the flour with the egg and curd mixture. Look at the thickness of the dough, it should be thin, sticky, but at the same time such that it can be sculpted from it.
Sprinkle the work surface with flour. Divide the dough into pieces the size of a chicken egg. Roll all the blanks into sausages 15-17 centimeters long and as thick as a finger. Form a round ball out of each "sausage" (just join the edges of the blanks). Place the rolls on a baking sheet covered with parchment, bake at 190 degrees for 30 minutes.
The trick: so that the rolls on top have a crispy crust and remain soft inside, for the first 7-10 minutes, the food should be baked at a temperature of 240-250 degrees, and then reduced to the above 190 degrees.
Kalachiki with cottage cheese and condensed milk
This recipe is incredibly simple, but despite this, the rolls are very tasty, tender and airy. The most important thing is to correctly prepare the dough, observing the proportions.
Ingredients:
- a can of condensed milk;
- 2 eggs;
- 200 grams of dry crumbly cottage cheese;
- two glasses of flour;
- a teaspoon of baking powder (or regular baking soda);
- vegetable oil.
Step-by-step cooking recipe:
Pour the condensed milk into a deep bowl (in the recipe it is important to use a quality product consisting only of milk and sugar), add eggs, cottage cheese, baking powder, whisk everything.
Pour a glass of flour into the mixture, stir until a homogeneous dough without lumps is obtained.
Sprinkle half a glass of flour on the work surface, lay out the dough, and sprinkle the dough on top with the remaining flour. Stir the flour into the dough, cover the finished product with foil and leave for 10-15 minutes.
Divide the dough into 40 equal parts. Roll each part into a 10 centimeters long flagellum and roll up in the form of a ball. Fry the blanks on both sides in hot vegetable oil (frying time on one side is two minutes).
After frying, put the finished rolls in a plate lined with paper towels. The dish can be served both cold and hot.
