Royal cheesecake: step by step recipe

This option is significantly different from the classic cheesecake. Royal pastry resembles a grated pie melting in your mouth with an airy filling of dense cream. The main advantage of this cheesecake is the contrast between the crispy top layer and the filling, which is reminiscent of soufflé in consistency. Even those who do not like ordinary cottage cheese will like baked goods. The proportions of sugar in the filling can be adjusted to taste, bearing in mind that it significantly increases the number of calories.

Ingredients:

  • 240 g of premium wheat flour;
  • 100 g sugar;
  • 150 g butter (can be replaced with quality margarine).

For filling:

  • 500 g of fine-grained fatty cottage cheese;
  • 3 eggs;
  • 100 g sugar;
  • 0.5 tsp salt;
  • 0.25 tsp soda;
  • a pinch of vanillin.

Grate cold butter or chop finely with a knife, mix with sugar and sifted flour. Grind the mass into coarse crumbs. An important condition is that you need to act quickly so that the oil does not start to melt from the warmth of your hands.

Spread two-thirds of the resulting dough over the bottom of the heat-resistant mold. It is advisable to use a detachable round shape of sufficient depth, it should be lightly greased with oil or lined with baking paper. After leveling the dough along the bottom, form low sides.

Prepare the filling. Grind cottage cheese into a smooth homogeneous mass, carefully kneading even the smallest lumps. Add salt, baking soda, sugar and vanillin. The filling should be tried, you may need to increase the amount of sugar. Beat the eggs into the mass, mixing the filling thoroughly. In the process, it is important to ensure that the mass does not turn out to be too liquid. Ideally, the consistency should resemble thick sour cream.

Pour the curd mass onto a shortbread cake, smooth out with a silicone spatula or a wide knife. Sprinkle the remaining butter and flour crumbs over the cheesecake evenly. Put the mold in the oven, preheated to 200 degrees, bake for 40-45 minutes. The top and sides of the cheesecake should take on a beautiful golden hue. Take the product out of the oven and cool directly in the mold. Remove the removable side, place the cheesecake on a platter and serve. Garnish with whipped cream if desired.
