Kefir baking allows culinary specialists to do without yeast and at the same time get a plastic, airy dough. Based on a fermented milk drink and soda, you can make quick pancakes, pies, pizza and other pastries, including a variety of crumbly delicacies. This significantly saves time, which is usually spent on standing the dough.
Quick pizza with kefir
To make the kefir pizza dough thin and plastic, it is recommended to pre-cool 150 ml of water in the refrigerator compartment. When it turns icy, sift 3 cups of wheat flour, forming a depression in the center.
Add half a teaspoon of slaked soda to a glass of kefir, stir everything and pour it into the middle of the flour slide. Add a teaspoon of salt (without a slide), a tablespoon of granulated sugar and a pinch of citric acid.
Pour water from the refrigerator in a thin stream, in small portions, sprinkling flour from the edges into the center. Knead the tough dough and roll it into a layer. Cover the baking sheet with baking paper. Spread out the dough, coat the top well with tomato sauce.

For a crumbly cake, you need 100 grams of creamy margarine. It needs to be cut into cubes and kneaded with 0.5 cups of sifted wheat flour. Add kefir (slightly not full glass) and a pinch of quicklime baking soda. Pour in 5 grams of table salt and 25 grams of granulated sugar. Gradually add 2 cups of sifted flour. Substitute the dough.
For the filling, scroll 200 grams of pork and 100 grams of chicken breast, as well as a peeled large onion in a meat grinder with a fine nozzle. Do not salt or pepper. Instead, mix a finely chopped bunch of parsley or dill with the minced meat, add nutmeg to taste.

Beat an egg into a deep bowl or saucepan. Add other ingredients:
- a teaspoon of table salt without a slide;
- a glass of kefir;
- a glass of granulated sugar;
- 0.5 grams of slaked soda vinegar
Beat everything with a mixer. Then add 200 grams of sifted wheat flour in small portions while stirring.
Peel a couple of large apples from the skin and core, finely chop and add to the creamy dough. Bake pancakes in refined sunflower oil on both sides until browned.
The dough on kefir with apples can be prepared in a different sequence:
- cut a large peeled apple into slices;
- scroll the fruit pulp in a blender with 0.5 cups of granulated sugar;
- combine with 0.5 liters of kefir;
- beat out a couple of eggs;
- add a pinch of salt and 2.5 grams of baking soda;
- add 2 cups of sifted wheat flour.
Mix everything well and bake the pancakes. The baked goods will turn out fluffy, airy.
Deep-fried kefir crumpets
Stir 1/3 teaspoon of baking soda in a glass of low-fat kefir. Combine the egg with three tablespoons of granulated sugar and beat with a mixer in a foam, then add to kefir.
With constant stirring, add one and a half cups of sifted wheat flour, knead a thick dough. Add 3 tablespoons of ghee and knead again.
Heat half a glass of refined vegetable oil in a deep cast-iron saucepan. Spoon the portions of dough with a spoon, dip in deep fat and fry the crumpets on both sides until golden brown. Place in a dish on a paper towel to absorb excess oil.
Homemade bread on kefir in a bread maker
Pour 250 ml of kefir into a bread machine, add half a teaspoon of granulated sugar and a teaspoon of sodium chloride and baking soda. Add 2, 5 cups of bread flour and a tablespoon of sesame seeds.
It is recommended to prepare the dough with the addition of baking soda quickly. To do this, set the express baking mode (up to an hour). If the bread is not baked, which depends on the quality of flour and kefir, it can be brought to readiness for 15-20 minutes in the "Baking" mode.

Knead the soft dough for 10-15 minutes, adding flour as needed. Wrap with cling film and let sit for 1, 5 hours, so that it doubles. After that, knead a little more, then cut into portions for buns. Roll up the balls, place on a baking sheet covered with baking paper.
Cover the dough pieces with cling film and hold until the oven heats up to 200 ° C. Beat a couple of eggs into a bowl, stir, grease the buns with the mixture and bake for half an hour.
Chocolate cookies with kefir
Separate the yolks of two chicken eggs, pour a glass of granulated sugar into them and beat with a broom for 2 minutes. With constant stirring, add in succession:
- a tablespoon of milk;
- 180 ml of vegetable oil;
- 250 ml of kefir.
- Sift 600 grams of premium wheat flour and a couple of tablespoons of cocoa powder and add small portions to the egg mixture, not forgetting to stir. Combine with 30 g of baking powder, a pinch of table salt and a packet of vanilla sugar.
Knead, adding more flour if necessary, until the smooth dough no longer flows to your hands. Form dough balls, then flatten into flat cakes and place on a baking sheet covered with parchment. Bake the cookies for 25 minutes in the oven at 180 ° C.

Sift 2 cups of wheat flour with a slide on the board, pour a glass of water at room temperature and 100 ml of low-fat kefir into the middle. Add a pinch of table salt and 25 ml of vodka. While mixing the ingredients, add half a glass of refined sunflower oil.
Knead, from time to time add more flour to the dough until it becomes elastic, plastic, does not stop flowing to the board and palms. It should be slightly softer than for dumplings. Cover with a cotton towel and let stand for 30 minutes.

Mix 250 grams of crumbly cottage cheese with egg yolk, a couple of tablespoons of granulated sugar and salt to taste. Stir the filling for the dumplings so that a homogeneous curd mass is obtained.
Divide the dough into pieces. Roll each into a thin layer and cut out the circles using molds or a glass. Put the filling in each, connect and pinch the edges of the dough. Dip the dumplings one by one into salted boiling water, stir and cook for 5 minutes after surfacing.

Beat 3 eggs into a bowl, combine with a glass of granulated sugar and beat with a broom until you get a fluffy white mass. Pour in 1, 5 glasses of kefir. Add an 18 gram sachet of baking powder and stir in 2 cups semolina in portions.

Pour in 2 cups of sifted wheat flour in small portions. In this case, the dough must be constantly stirred so that there are no lumps.
When you get a perfectly homogeneous mixture, separate one portion and tint it with 1-2 teaspoons of cocoa powder. Pour the chocolate dough into a silicone mold and bake in the oven at 180 ° C for 20 minutes.
Remove the chocolate cake from the mold, pour the second portion of the dough without cocoa into it and bake for 20 minutes. When both halves of the cake have cooled, cut each with a thread into thinner biscuits.
Prepare the cream:
- pour 400 ml of sour cream with a fat content of 25% or higher into the blender bowl;
- add half a glass of granulated sugar or powdered sugar;
- put vanillin on the tip of a knife;
- beat everything in a blender at high speed.
