Dried apricots should not be transparent. The real color of dried apricots is reddish or brown. Beware of too rich golden color - most likely, the product is dried with the use of additives (sulfurous anhydrite), giving it an "attractive" appearance. Choose dried apricots with a matte grayish tint. This is exactly the look it gets with the correct natural drying process. If this shade is present, then the dried fruit has retained all the useful properties and is made without the use of chemical dyes.
Step 2
Potassium permanganate is often used as the latter. To check whether the product is tinted or not, slightly remember the dried fruit in your hand. If the skin is stained, do not buy the product. Make sure that the dried apricots are not darkened. They are caused by sunburn caused by poor quality drying.
Step 3
Try the dried apricots by touch: they should not be lethargic or, conversely, too dry and hard. High-quality dried apricots do not "melt" in the hand. If it is smeared, it is likely that the storage rules were violated or it was originally made from low-quality apricot. Dried apricots should be large - this means that the apricot was ripe and all its useful properties were preserved.
Step 4
Taste dried apricots. If a wine aftertaste remains, discard the product. The reason is a gross violation of the technology for manufacturing dried fruit, which can lead to poisoning or other unpleasant consequences for health.
