Many housewives like to cook buckwheat for its unique taste and a lot of useful properties. But it is good not only as a side dish and porridge. It also makes delicious and nutritious first courses. For example, buckwheat goes well with meatballs. Such buckwheat soup is served even in kindergartens, so children will surely appreciate the food.
It is necessary
- - minced meat (pork and beef) - 300 g;
- - unground buckwheat - 4 tbsp. l. with a slide;
- - onions - 2 pcs.;
- - small carrot - 1 pc.;
- - potatoes - 3 pcs.;
- - ground black pepper;
- - salt;
- - bay leaf - 2 pcs.;
- - vegetable oil for frying.
Instructions
Step 1
Peel potatoes, onions and carrots and rinse under running water. Cut the potatoes into strips, grate the carrots, and finely chop the onion with a knife. Sort the buckwheat and rinse.
Step 2
Put the minced pork and beef in a bowl, add half of the chopped onion, black pepper and salt to taste. Mix everything together and beat well. From the resulting mass, form a small meatball with a diameter of 2-3 cm.
Step 3
Fill a saucepan with 2 liters of cold water and bring to a boil. Then place the meatballs in it, bring to a boil again and cook at moderate temperature for 15 minutes.
Step 4
While the meatballs are boiling, take a skillet, heat it up, and pour in some vegetable oil. Add the leftover onion and sauté until translucent. Add carrots to it and fry everything together for about 5 minutes.
Step 5
When 15 minutes after boiling have passed, put potatoes, buckwheat and onion-carrot frying in a saucepan with the meatballs. Bring to a boil again and cook the meatball and buckwheat soup for another 20 minutes. 5 minutes before the end of the time, add salt, black pepper to taste and bay leaf.
Step 6
Remove the finished soup from the stove and let it brew for 5-10 minutes. Then pour into portions and serve with chopped herbs, vegetable salad or pickles.
