You can also cook many different dishes from this delicious product. But before cooking, it is better to soak the eggplants in order to remove their characteristic bitterness.

Step 1

Choose young eggplants for cooking. Their crust will be much softer, and the vegetables themselves, when soaked, will get rid of bitterness much faster.

Wash the eggplants thoroughly under running water, dry and trim on both sides. After that, cut them into cubes, circles or small plates, depending on what kind of dish you are going to cook. Place the eggplants in a saucepan.

Prepare a soaking solution. To do this, dilute 1 tbsp in a liter of cold water. a spoonful of salt. Pour the salted water over the eggplant, cover the pot with a lid and leave the vegetables for 20-30 minutes.

After the allotted time, drain the salt water and rinse the eggplants under running water. Thanks to this, they will lose their bitterness, and the dish from them will turn out to be more delicious.

Get rid of the bitterness with salt. To do this, cut the eggplants into thin plates or slices, after cutting off the unnecessary tail. Place a wire rack on a saucepan or drip tray, place the eggplants on it and sprinkle with salt. Cover the top with a lid on which you put some kind of oppression, for example, a jar of water. Leave for 30-45 minutes for the vegetables to release juice under the influence of salt, and with it - their characteristic bitterness.

When the time is up, remove the lid and rinse the eggplant under running water. This steeping method is suitable for processing eggplants, which will be marinated in vinegar and oil, and then used to prepare cold dishes and salads.
