This vegetable is very rich in vitamins, trace elements, keratin and contains a large amount of fiber. At the same time, pumpkin is a fairly low-calorie product, and therefore it is successfully used in various dietary dishes. Another undoubted advantage of pumpkin is that it can be cooked quite quickly.

Step 1
Peel the pumpkin before cooking. To do this, cut off the ends of the vegetable and divide it in half. Peel them off the thick skin. Using a tablespoon, remove the seeds from the pumpkin and use the resulting pulp as directed in the recipe.
Step 2
An ideal dish for a light breakfast or afternoon snack is a pumpkin salad with apples. Grate the pumpkin pulp and 2 large peeled apples on a coarse grater. Season the salad with honey. Garnish with green and red apple slices before serving.

A more piquant and spicy-tasting pumpkin salad with pickles. Grate the pumpkin on a coarse grater (you can use a Korean carrot grater). Cut cucumbers and fresh tomatoes into small cubes. Finely chop the parsley and green onion. Grind the garlic with a press. Stir the components of the salads, salt and pepper the dish. Season with olive oil. Garnish with parsley sprigs and pickled cucumber leaves.

For lunch, you can prepare a dietary vegetable soup. Dip pumpkin, zucchini, carrots, bell peppers and potatoes into boiling water. The amount of food depends on how thick you want the dish to be. Simmer vegetables over low heat until tender. Add the diced tomato at the end of cooking. Season the soup to taste. Serve the dish, garnish with parsley and dill.

Delicious pumpkin pancakes will please both adults and children. Combine kefir and beaten egg. Add some salt to the mixture. Grate the pumpkin on a coarse grater. Pour it with kefir-egg liquid and add flour until a shaped mass is obtained. Spoon the dough into a well-heated frying pan and fry on both sides until golden brown. These pancakes are delicious hot and cold. Serve sour cream separately.
