Instructions

Step 1

Thoroughly rinse the shanks, scrape the skin with a knife, removing the remaining bristles from the skin as much as possible. Soak them in cool water for 3-4 hours, it is recommended to change the water once.

Step 2

Place the pot on the fire and let the water boil. After that, put the meat in boiling water, while the fish should be completely covered with water. Salt the dish, add black and allspice peas. You can add a well-washed unpeeled onion, carrots to the pan. Bring water to a boil and immediately reduce heat to minimal boiling. Next, the shanks should be simmered for at least 1.5 hours.

Step 3

While the pork shanks are boiling, you need to prepare a mixture for coating. To do this, use mustard or adjika, a mixture of peppers, or ready-made spices such as hops-suneli, utskho-suneli, chopped garlic and honey.

Step 4

After boiling the meat, it is taken out of the pan onto a dish and allowed to cool slightly. Carrots and onions are taken out of the broth, they are no longer used. The broth is used for other dishes or part of it is used to prepare sauce for meat by combining 2-3 tablespoons of broth, a pinch of salt and garlic passed through a press. This sauce is served in a separate saucepan and poured over the shank ready-made.

Step 5

The slightly cooled shanks are rubbed with a honey-pepper mixture for coating and poisoned in the oven until a golden crust appears. The meat is baked for about 40-50 minutes at a temperature of 180 degrees.
