Pork is an ideal meat for roasting, it is especially good to cook it in a special sleeve or in foil, which will prevent the meat from drying out and burning. This dish is delicious and easy to prepare, but the process is not very quick. However, the result is worth it.

- Garlic - 1 head,
- Carrots - 1 piece
- Dijon mustard,

Instructions
Step 1
Cut the garlic cloves in half, cut the carrots into small pieces. Combine salt and pepper in a saucer. With a thin, sharp knife, make deep holes in the meat and pour a mixture of salt and pepper into each, put a piece of garlic and carrots.
Step 2
Sprinkle a piece of meat on top with salt and pepper, brush with mustard, wrap it tightly in plastic wrap and let it stand at room temperature for 4 hours, then put it in the refrigerator for a day.
Step 3
Preheat the oven to 220C. Remove the meat, remove the film, wrap the pork in foil, wrap the edges securely and squeeze them tightly. Place the meat on a baking sheet and place in the oven.
Step 4
After an hour, reduce the temperature in the oven to 180C. Bake for another 40 minutes, then remove the baking sheet, unfold the foil, increase the temperature in the oven to 200C and place the baking sheet with meat for another 15-20 minutes, baking it until golden brown.
Step 5
Turn off the oven, let the meat stand for a while, as the baking process is still ongoing. Then remove the meat, put it on a platter, cut into pieces and serve, garnished with herbs and vegetables.
