So, to prepare an original beetroot soup with the addition of mushrooms and prunes, you will need: 400 grams of cabbage, 100 grams of mushrooms, 400 grams of beets, 400 grams of potatoes, 100 grams of butter, carrots, parsley root, onion, a teaspoon of flour, half a glass tomato puree, spices and salt to taste.

First, wash the mushrooms, boil them in water and chop. Then chop the beets into straw, place in a saucepan and cover with a glass of mushroom broth. Add tomato puree there and simmer until half cooked. Fry the onions, carrots and spices in oil and mix with the sautéed flour. When the mushroom broth boils, add chopped cabbage, potatoes, prunes, stewed beets, sauteed onions, flour, spices and carrots. Throw the mushrooms into the soup last. Cook the soup until cooked through. Garnish the soup with parsley when serving.

If you want to cook young beetroot borscht, use its tops. First, cut the tops of the tops and boil them in salted water. Then add the grated beets and 1 tbsp. oils. Bring the soup until tender. Beets always make delicious and healthy salads. For example, beetroot salad with apples. For it you will need 250 grams of boiled beets, fresh juice of half a lemon, 2 apples, 1 tsp. sugar, 2 tbsp. vegetable oil, parsley, dill and salt to taste. Chop the beets and apples on a coarse grater, mix. Pour in lemon juice, add sugar, salt and season with vegetable oil. Finish off with fresh herbs.

For beetroot salad with nuts, take 4 boiled beets, 4 apples, 10 walnuts, 4 tablespoons. mayonnaise, 4 tablespoons sour cream, 2 cloves of garlic, sugar, salt and herbs. Boil the beets and grate on a coarse grater with apples. Add chopped walnuts, sugar, salt to the beets and season the salad with sour cream and mayonnaise. Serve with parsley. This salad can be prepared without apples. Then sugar should not be added.
