To cook herring in mustard sauce, peel 6 fresh fish carcasses from entrails and scales, cut into medium-sized pieces. Melt 50 grams of butter in a frying pan, and pour 200 grams of cold milk into one of two bowls and dissolve a teaspoon of salt in it. Pour 200 grams of flour on the second plate. Dip pieces of herring in milk, then dip in flour and fry in a skillet over medium heat on both sides.
Step 2
Transfer the prepared fish to a dish, and in the pan where it was fried, prepare the sauce. To do this, melt another 60 grams of butter, add two tablespoons of flour and lightly fry, constantly breaking the flour lumps. Pour in 400 grams of water, salt to taste and add 1 teaspoon of mustard and the juice of half a lemon. Bring the sauce to a boil, stir well and pour over the fish.
Step 3
Simmer herring with vegetables. To do this, peel 4 fresh fish and remove all entrails. Rinse and cut into portions. Grate four medium carrots on a coarse grater and cut one large onion into half rings. Pour 50 grams of refined sunflower oil into a preheated pan and simmer the vegetables in it until half cooked.

Cover the bottom of the duck with foil and alternate layers of fish and vegetables, sprinkle with salt and pepper. Then pour in 100 grams of hot water, cover and put the rooster on the fire. Simmer over low heat for an hour.
Step 5
To bake the herring in the oven, peel and cut 5 large mushrooms into small pieces. Chop one onion, bunch of parsley and dice one hard-boiled egg. Mix all these ingredients. Gut two medium-sized fish carcasses and stuff with the prepared filling.
Step 6
Mix 50 grams of softened butter with one tablespoon of horseradish and spread the mixture on 2 sheets of foil. Place one fish carcass on top of each sheet, close tightly and place on a baking sheet. Bake for about 25 minutes at 200 ° C.
