Herring dishes take pride of place in the menu of a Russian person. It can be fried, baked, or simply served as a snack. But, regardless of the method of preparation, herring dishes are perfect for both a large feast and a modest family dinner.

- 2 heads of onions;
- 2 carrots;

- seasoning for potatoes;
- 5 potato tubers;
- 80 grams of vegetable oil;
- 100 grams of water.
Instructions
Step 1
To fry fresh herring, take 800 grams of fillet and cut into portions. Sprinkle salt on both sides of each bite and set aside. Drive two chicken eggs into a separate bowl, add a few pinches of pepper and one pinch of salt. Then beat the egg mixture thoroughly. Grate 30 grams of hard cheese on a fine grater, add to the eggs and mix. Pour 100 grams of ground breadcrumbs into a flat plate. Preheat a skillet and add 3 tablespoons of vegetable oil to it. Dip each piece of fresh herring into the cheese and egg mixture, and then bread in breadcrumbs. Fry over medium heat on both sides for 12 minutes. Serve hot with mashed potatoes and garnish with chopped herbs.
Step 2
If you want to roast fresh herring, take 3 large carcasses and remove the bones from them. Cut a slit in each carcass to form an envelope. For the filling, boil two chicken eggs hard-boiled and chop them into small cubes. Chop 100 grams of green onions. Combine eggs and onions in a separate bowl and salt well. Place 60 grams of bread crumbs on a flat dish. Take a shallow bowl and combine 50 ml of milk, 2 chicken eggs and a few pinches of pepper in it. Preheat oven to 180 degrees Celsius and grease a baking sheet with vegetable oil. Fill each herring with the filling and combine the halves with toothpicks or wooden skewers. Moisten the carcasses in an egg and milk mixture and dip in breadcrumbs. Place on a baking sheet and bake in the oven for 20 minutes. Water the carcasses with hot oil from time to time. As soon as the herring is browned, pour 100 ml of cream onto a baking sheet. After 10 minutes, the fish will be covered with an appetizing crust, then sprinkle it with grated cheese and turn off the oven after 7 minutes.
Step 3
To cook stewed herring with vegetables, take three fish carcasses, peel them of large bones and divide into portions. Season each piece with salt and place in the bottom of a wet saucepan. Peel two onions and cut into thick half rings. Place a layer of onion on top of the herring, salt and pepper a little. Peel two large carrots and cut into thin slices. This will be the next layer in a saucepan with herring and onions, which must also be seasoned with salt and pepper. Peel 5 medium potato tubers and cut into medium slices. Place on top of carrots and sprinkle with potato seasoning. Pour 80 grams of vegetable oil into a saucepan and add 100 grams of boiled water. Put on medium heat and simmer for half an hour.
