In winter, variety and positive emotions are especially lacking. Although the summer abundance of fresh vegetables and fruits is still very far away, you can delight yourself in the preparation of various, inexpensive and original salads, which are also very simple and will delight your loved ones on long winter evenings.
Fish salad. You will need 1 medium onion, 3-4 boiled eggs, 200 grams of hard cheese, a can of canned fish, mayonnaise, 50 grams of butter, 2 boiled carrots. Marinate some turnip onions in a light vinegar solution to remove the bitterness. Put grated egg whites in thin layers in a wide salad bowl, then grated cheese (any hard cheese will do), then fish (any canned in its own juice, for example, saury). Then grease with mayonnaise and put finely chopped onion on top. Next, put a little grated butter, on it - a layer of grated boiled carrots and crumbled egg yolks. Grease again with mayonnaise and put in the refrigerator for 1, 5 hours. You can decorate with dill sprigs and crushed walnuts.
Potato salad. Cut boiled potatoes into cubes (3-4 medium tubers). Wash and finely chop 3-4 celery stalks. Cut fresh cucumber into cubes, finely chop boiled eggs (2 pieces). Add greens (parsley, cilantro, dill are suitable), mix everything. Season the salad with a mustard and light mayonnaise mixture.
Champignon salad. For him you will need the following products: 1 kg of mushrooms, 3-4 boiled eggs, herbs (parsley, onion, dill), a pack of crab sticks, 1 apple, 1 onion, mayonnaise, sour cream. Boil mushrooms and cut into thin slices. Add chopped boiled eggs and herbs. Cut the crab sticks into large cubes, grate a fresh apple on a coarse grater. Pour the apple and finely chopped onion with a solution of vinegar and warm water (in half) for 10-15 minutes. Then mix all the ingredients, salt and pepper to taste and season with mayonnaise or a mixture of mayonnaise and sour cream.
Georgian salad. Free canned red beans (1 can) from liquid. Cut fresh cucumber, bell pepper and cervelat sausage (250-300 grams) into long strips. Grate one clove of garlic on a very fine grater (or use a garlic press), salt and pepper to taste. Season with mayonnaise.
Fruit salad "Sweet Tooth". Layers can be laid out in small portioned salad bowls or pretty cups. Pour 100 grams of prunes and dried apricots with boiling water for 15-20 minutes. Cut apples (100 grams) into cubes and lay out in the first layer. Top with finely chopped prunes, then thin kiwi slices (2-3 pieces), then dried apricots. Cut 2 bananas into thin slices and lay out in the next layer. The last layer is ripe persimmon (2-3 pieces), cut into cubes. Everything is filled with condensed milk or honey. Top can be decorated with nuts and coconut.
