Instructions
Step 1
Sort out, rinse and place lentils (250 g) in boiling water. Salt. Cook for 10 minutes over medium heat. Remove the foam. Cover with a lid. Cook for 20 minutes until tender. Stir continuously. Try to keep the lentils soft.
Step 2
Cut vegetables into small cubes. Grind 2 chili peppers. Heat vegetable oil in a skillet (try to use a deep skillet). Add the black mustard seeds and cover the pan. When the seeds stop shooting, add the spices. Fry them for a few seconds. Put the vegetables in the pan with the spices, salt and stir. Vegetables must be fried for 15 minutes. Add shredded coconut and cook for 2 minutes.
Step 3
Combine lentils with vegetables. Pour in the lemon juice, stir and simmer over low heat, without a lid, until cooked. The mixture will thicken and the vegetables will soften.
Step 4
Make dosa pancakes. Cover lentils and rice with water and leave for 8 hours. Drain and grind in a blender with a little water. The result is a liquid gruel. Add chopped chili, salt, sugar and stir. Place in a warm place for 12 hours.
Step 5
Grease a skillet with vegetable oil and heat. Pour 4 tablespoons into the center. test. Spread in a circle all over the pan. Cook for about 2 minutes and turn over. Fry lightly on the other side. Roll the pancakes into tubes.
