Typically, cauliflower is used in casseroles or fried as a side dish for meat dishes. But a muffin-baked cauliflower dish can serve as a staple on your dining table. It will be appreciated even by children, from whom you will "hide" the vegetables they do not like so much.

  • - 300 g of cauliflower;
  • - 100 g of hard cheese;
  • - 2 eggs;
  • - 3 tablespoons of heavy cream;
  • - 1 tablespoon of mustard;
  • - 70 g baking flour;
  • - salt.

Instructions

Step 1

Peel the leaves of the cauliflower. Separate the inflorescences and rinse them under cold water. Pour water into a saucepan, salt and bring to a boil. Immerse the cauliflower in the water, wait until it boils again, and simmer for 15 minutes. The liquid should completely cover the inflorescences. After cooking, drain and set aside to cool.

Step 2

Whisk the egg whites separately. Beat until a dense foam is formed. Gently pour the cream into the eggs and whisk again. Then add egg yolks, sifted flour, mustard and salt. Grind the cheese in a blender or grate it on a fine grater. Grind the cooled cauliflower in a blender as well. Gently combine the cabbage, beaten dough and grated cheese. The mixture should look like a cream in appearance.

Step 3

To bake muffins, use small silicone tins or baking paper tins. Fill the containers with the prepared cream to 2/3 of their total volume. Bake in the oven for 30 minutes, set the temperature to 180 degrees. Preheat the oven before cooking.
