- - 1 liter of water;
- - 4 pears;
- - 100 g of asparagus;
- - 150 g of leafy chard;
- - 30 g butter;
- - 100 g of blue cheese;
- - juice of one grapefruit;
- - 40 ml of olive oil;
- - 2 tsp lemon juice;
- - 2, 5 tsp pear juice;
- - 35 ml of wine vinegar;
- - sugar, salt to taste.
- You will also need a grill pan.
Instructions
Step 1
Boil water in a saucepan, add asparagus, butter, lemon juice, sugar and salt to taste. Cook for 15 minutes. Remove the finished asparagus with a slotted spoon. Leave the broth for the sauce.
Step 2
Rinse and dry the chard. Finely chop the cheese. Cut the pears into 4 pieces, cut the cores out of them.
Step 3
Heat vegetable oil in a grill pan. Fry the prepared pears in it for 1-2 minutes on each side.
Step 4
For the sauce, mix 100 ml of broth with pear and grapefruit juices, olive oil and vinegar, and season with salt.
Step 5
Combine all salad ingredients. Divide it into plates and pour over the sauce.
