  • - 600 g mussels
  • - 1 can of green peas
  • - 1 head of onion
  • - salt - to taste
  • - a bunch of parsley

Instructions

Step 1

The shrimp must be defrosted in advance so that all excess liquid is drained from them. After that, they need to be washed in water. A pot of water is placed on the fire and brought to a boil. Shrimps are thrown into salted boiling water and boiled, from the moment the water boils again, no more than 3 minutes. After the shrimp are reclined in a colander.

Step 2

Now you need to cook the mussels. If the mussels are fresh, then they are first peeled and washed. It is dipped in already boiling water and boiled for about 2-3 minutes. Then the mussels are poured with cold water and brought to a boil again. Once the shells are open, you need to remove the meat. If frozen mussels are taken, then it is recommended to pour them into boiling salted water and wait until the top of the mussels is covered with foam. After that, the meat is quickly removed from the water. Usually, sea salt is used when cooking mussels.

Step 3

The broth is strained, where the mussels were cooked, and mixed with the shrimp broth. Saffron is added.

Step 4

Add olive oil to the paella skillet and heat it up. Chopped onion and garlic are tossed. Vegetables are fried over low heat until soft.

Step 5

Next, the tomatoes should be peeled. For this, a shallow incision is made in the tomato. Then they are scalded with boiling water. Take out the tomatoes in turn and peel off the peel with a knife at the incision sites. The tomatoes are cut.

Step 6

The bell pepper is washed, cut into two halves and the core is cut. Cut into cubes. Together with the tomatoes, add to the pan. Then the squid rings are added.

Step 7

Rice is thoroughly washed and laid out in a frying pan. The whole is fried together for about 10 minutes, stirring constantly. After that, it is poured with cooked broth and brought to a boil. Then the heat is reduced, and the food is cooked for about 20 minutes more. Broth is added if necessary. 5 minutes before the paella is ready, throw the shrimp into the pan.

Step 8

Decorate the finished paella with pepper and sprinkle with chopped herbs. Peas and mussels are added. Before serving, the dish is covered with foil - and after 5 minutes the dish is ready.
