Pickle is a soup that, despite the presence of pickles in it, has a very soft, rich taste. The main components of the pickle are also pearl barley and browned vegetables. The basis of any pickle is meat, chicken, fish and mushroom broth.

It is necessary

    • 450 g of beef;
    • 100 g of pearl barley;
    • 400 g potatoes;
    • 200 g of pickled cucumbers;
    • 200 ml of cucumber pickle;
    • 2 heads of onions;
    • 150 g carrots;
    • 2 tbsp. tablespoons of vegetable oil;
    • Bay leaf;
    • salt;
    • black pepper.

Instructions

Step 1

Take the meat. Clean it from films and rinse it thoroughly under cold running water. Cut it into small pieces of 20 g. Pour the meat with cold water and cook for one hour. Skim off any foam and fat during cooking. Cover the pot with a lid, reduce heat, add salt and black pepper. Remove the meat, strain the prepared broth into a separate saucepan.

Step 2

Rinse pearl barley twice with cold water, put in a container and pour boiling water over for 40 minutes. Cover the pot with a lid and place in a warm place. The groats should swell and double in volume. Add it to the boiling strained broth.

Step 3

Wash the potatoes, peel and cut into long sticks or 10 mm cubes. Add to broth and cook for 10 minutes.

Step 4

Take onions and carrots, wash and peel them. Finely chop the onion. Grate carrots or cut into strips.

Step 5

Heat the skillet well, add vegetable oil and fry the onion in it. Add carrots, continue to fry. Vegetables should be soft and golden in color.

Step 6

Peel the cucumbers, cut lengthwise, free from seeds. Use unpeeled cucumbers with thin skin and small seeds. Cut them into equal small cubes. Pour the broth in a separate saucepan, simmer a little.

Step 7

Add prepared cucumbers to boiling broth. Cook for 5 minutes and add fried onions and carrots. Add pieces of meat.

Step 8

Pour the cucumber pickle into the broth through a fine sieve, put the bay leaf. There is no need to add salt. The flavor of the soup can be adjusted by the amount of brine added. Continue cooking for another 5 minutes.

Step 9

Serve the prepared pickle with sour cream in a portioned plate. Place the sliced meat. You can add chopped dill or parsley.
