Lenten pickle is a dish that is prepared without adding meat and other animal products. This dish is very light. Garlic gives the soup its flavor and makes it very appetizing.

- 200 gr. cucumber pickle
- 0.5 cups pearl barley
- 200 gr. pickled cucumbers
- 3 large potatoes
- 1 large onion
- 1 carrot
- 3 cloves of garlic
- 2 bay leaves
- salt
- dried basil

- vegetable oil for passivation
Instructions
Step 1
Pour barley into boiling water and cook for 30-40 minutes.
Step 2
We clean and chop the potatoes, add them to the broth. Cook for 15 minutes.
Step 3
Cut the cucumbers into strips. Simmer in a small amount of vegetable oil with the addition of broth for 10 minutes.
Step 4
Saute finely chopped onions in vegetable oil until golden brown.
Step 5
We clean, chop and fry the carrots.
Step 6
Add cucumbers, onions and carrots to the broth. Add cucumber pickle to the soup and cook for 10 minutes.
Step 7
Then add finely chopped garlic, bay leaf and basil to the soup. Add salt if necessary.
Step 8
Cook for another 5 minutes and the soup is ready.
Step 9
Sprinkle with herbs before serving. You can serve croutons.
