It is necessary

  • For the test:
  • - 2, 5 glasses of flour;
  • - 2 eggs;
  • - 7 tablespoons of water;
  • - 2 tablespoons of softened butter;
  • - 1/2 teaspoon of salt.
  • For filling:
  • - 500 grams of pork (brisket, neck) or ready-made minced meat (beef, pork, mixed);
  • - 150 grams of pitted prunes;
  • - 1 onion;
  • - salt, pepper, a clove bud and a few juniper berries.

Instructions

Step 1

Dough preparation

Dissolve the salt in water. Sift the flour, add oil and rub with your hands until crumbs form. Pour in salted water, eggs, knead the dough, roll it into a ball, wrap with cling film and put in a warm place for half an hour.

Step 2

Preparation of the filling

Grind cloves and juniper berries into powder, add salt and pepper. Rinse the meat, cut into small pieces, mince together with the peeled onion and prunes. Pour in a mixture of spices and salt, mix everything thoroughly. If minced meat is used, then add chopped onions, prunes and spices to it.

Step 3

Cooking rolls

Sprinkle flour on the table, roll out the dough into a rectangular layer 0.5 cm thick. Put the meat filling on the dough, smooth it over the entire surface with a hand dipped in water. Roll the layer into a roll, and then cut it across into 12 pieces, touch them up with your hands, giving them a round shape. Put the rolls in a deep baking sheet, greased with oil, so that they do not touch. Pour salted water into a baking sheet to half the height of the rolls, cover with foil on top and bake in the oven for 40 minutes at a temperature of 200 degrees. Then remove the foil and bake for about 10 minutes until browning. When serving, sprinkle with chopped herbs.
