To make a hearty pork brisket roll, you will need the following products:

- 1 - 1.5 kg of pork belly;

- 2 carrots;

- 1 head of onion;

Peel carrots and onions, wash and cut into large pieces. Wash the dill, pat dry on a paper towel and chop finely. Rinse the pork brisket, cut the film and remove the ribs. Season with salt and pepper, roll up (skin side up) and tie with threads.

Place the roll in a saucepan and cover with boiling water. Add carrots, onions, bay leaves, peppercorns and cook for 2-3 hours under a closed lid.

Then put the roll on a wooden board, remove the threads, cut the brisket into slices about a centimeter and place on a round dish in rows so that each piece covers about a third of the other. Garnish with chopped dill and serve.

Pork roll can be prepared according to another recipe, which will require:

- 500 g pork fillet;

- 500 g salted pork lard;

- 500 g of hard cheese;

- 1 glass of walnut kernels;

- ground black pepper;

- salt.

Rinse the pork fillet, peel off films and fat. Beat with a wooden mallet, then pepper and salt. Cover with slices of salted bacon. Top with a layer of thinly sliced cheese chunks and finely chopped walnuts on top.

Gently roll everything up and tie with a thick thread. Place on a baking sheet and bake in the oven at 200 ° C until tender. After about an hour and a half, remove the pork roll from the oven and cool, then remove the threads and put the meat on a dish.

To prepare a pork roll with mushrooms, you need to take:

- 500 g pork fillet;

- 150 g of boiled mushrooms;

- 3-4 boiled eggs;

- 2-3 cloves of garlic;

- 2-3 tbsp. l. tomato paste;

- vegetable oil;

- pepper;

- salt.

Rinse the pork, dry it, then cut it and beat it lightly with a wooden mallet, forming a layer one and a half to two centimeters thick. Season the meat with salt and pepper. Top with finely chopped boiled mushrooms, chopped garlic and halves of hard-boiled eggs.

Gently roll the meat with the filling in the form of a roll and pull tightly with twine or thick thread. Place the pork roll in a greased roaster, grease the meat with tomato paste and bake in an oven preheated to 180 ° C for an hour and a half.
