Pork roll is a tasty and satisfying dish. A sandwich with it is good for breakfast or lunch at work. Pork roll, cut into beautiful slices, will take its rightful place on the festive table. Make a roll with mushrooms and cheese, or with prunes and dried apricots. Choose the recipe you like best.

- Pork roll with mushrooms and cheese:
- 1.5 kg of pork;
- 400 g of boiled mushrooms;
- 2 onions;
- 3 cloves of garlic;
- 150 g of cheese;
- juice of 1 lemon;
- 6 tablespoons of vegetable oil;
- salt;
- ground black pepper;
- parsley and dill.
- Pork roll with prunes and dried apricots:
- 1 kg of pork;
- 200 g of prunes;
- 200 g dried apricots;
- 15 g gelatin;
- water;
- bulb;
- carrot;
- 5 black peppercorns;
- Bay leaf;
- salt.
Instructions
Step 1
Pork roll with mushrooms and cheese
Prepare the filling. Grate 150 g of cheese on a coarse grater.

Finely chop 400 g of boiled mushrooms.

Peel and chop 2 onions.

Peel 3 cloves of garlic and chop finely.

Place mushrooms and onions in a skillet with vegetable oil and lightly fry them while stirring continuously.

Remove mushrooms and onions from heat, add grated cheese and chopped garlic to them. Add some chopped dill. Pour 4 tablespoons of vegetable oil into the filling. Mix everything well. The filling is ready.
Step 7
Take 1.5 kg of meat pork with fat layers. Rinse it under running cold water and place it on the table with the sandpaper down.

Spread the filling over the pork layer. Spread it evenly.
Step 9
Roll the pork into a roll and tie it with nylon thread.

Grease a baking sheet with vegetable oil and place the pork roll on it, seam side down.

Place a baking sheet with a roll in an oven preheated to 180 degrees. Bake the roll for 1, 5-2 hours, pouring over it with the allocated juice. The finished roll has a baked crust of a pleasant golden color. When pierced with a knife, clear juice flows out.

Place the finished roll on a platter, chill and cut into slices.

Pork roll with prunes and dried apricots
Pour 200 g dried apricots and 200 g pitted prunes separately with hot water and leave for 30 minutes.

Remove the dried apricots and prunes from the water and pat dry with a paper towel.

Pass prunes and dried apricots through a meat grinder separately from each other.

Spread 1 kg of washed pork with fat layers on the table. Beat the layer a little with a wooden hammer.

Place the prunes and dried apricots on the pork in alternating strips.

Sprinkle the filling with 15 g of gelatin.

Roll the pork into a roll, wrap it in cheesecloth and tie it with nylon thread.

Boil water in a large saucepan. Salt it.

Peel and wash 1 onion and 1 carrot. Place them whole in boiling water. Add bay leaf and 5 black peppercorns to the same.

Dip the roll in boiling water with vegetables and simmer for 2 hours.

Put the finished roll on a dish, put a cutting board on top, place the load on it. Leave the roll in this position until it cools.
