Instructions

Step 1

Rinse the pork pulp well under running water. Place in a deep cup and pour the champagne over the meat. It is not necessary to take a new bottle. If left unfinished, use it. Refrigerate pork overnight.

Take the pork out of the champagne. Dry a little. Make small cuts in the meat. Chop the garlic finely. Mix it together with adjika, mayonnaise and honey. Soak the pork well with the resulting sauce. Season with salt and sprinkle with spices.

Slice the onion into rings. Wrap tightly with the meat in foil so that the pork is covered with onions on all sides.

Place the pork in a 180-degree oven. Wait 30 minutes. Then remove the baking sheet from the oven. Unroll the foil. Fold the whole onion not in a baking sheet, but place the pork on it.

Top the meat with a little champagne. Only not the one that remained after pickling, but fresh. If desired, champagne can be replaced with wine or cognac.

Bake the dish for another 5-10 minutes. When the pork is browned, remove it from the oven and cool.

You can also serve a sauce made from fresh tomatoes with brass pork. Take 2-3 large, fleshy tomatoes. Cut into small wedges. Chop half a small onion and one garlic clove. Saute the onions in a skillet in sunflower oil.

When it becomes translucent, add the tomatoes. Wait until they let the juice out. Dilute with a little water if necessary. Salt, mix with garlic and spices. Simmer the sauce over low heat until thickened. Then cool it down.
