Herring under a fur coat is a very many-sided salad, every Russian knows it, he is one of the favorites on holiday tables. It is prepared and decorated in completely different ways. An interesting decoration with gelatin will give this dish a more presentable look, and the portions will not fall into separate pieces.

Ingredients:

  • 1 large fat herring;
  • 300 g boiled carrots;
  • 300 g of boiled beets;
  • 300 g boiled potatoes;
  • 2 boiled chicken eggs;
  • 100 g of purple onions;
  • 0.2 liters of cold drinking water;
  • 2 tablespoons of apple cider vinegar
  • 1 tablespoon granulated sugar;
  • 20 g gelatin;
  • 350 g mayonnaise.

Preparation:

  1. Cut the medium head of purple onion into small cubes, place in a bowl and add 100 ml of water. Pour in apple cider vinegar, put a spoonful of granulated sugar, stir and leave to marinate for 20 minutes.
  2. Soak gelatin in 100 ml of water until set aside.
  3. Boil carrots, potatoes, beets and eggs before main cooking and cool completely, peel them.
  4. Grate boiled potatoes on a coarse grater. Grate boiled beets too, but on a fine grater. Cut the carrots into small cubes.
  5. Peel the herring from the entrails, cut off all fins, tail and head, remove the skin, pull out the ridge and bones. Cut the resulting fillet into small pieces.
  6. Season the prepared vegetables with salt and pepper.
  7. During this time, the gelatin managed to swell, now it needs to be melted in a water bath.
  8. Add mayonnaise to a bowl of gelatin and mix thoroughly until smooth.
  9. Take any deep shape, moisten it with water and cover with cling film with a margin. Here we will lay out the ingredients of the salad.
  10. Mix the grated beets with part of the mayonnaise (with gelatin), put it in the first layer on the bottom of the mold.
  11. Mix the potatoes with mayonnaise, roughly divide the potato mass into 2 equal halves, put one part on the beets.
  12. Drain the vinegar water from the onion, mix it with herring and a few tablespoons of mayonnaise, and put in an even layer in a mold.
  13. Top with the second remaining potato.
  14. The last layer is carrots mixed with mayonnaise.
  15. Cover the salad with cling film and refrigerate for a couple of hours.
  16. Grate boiled eggs finely. Finely chop the greens. After a while, remove the mold from the refrigerator, open the foil, gently turn the salad onto a large flat plate.
  17. Decorate with grated egg and dill on top.
