For the salad, mainly the less fatty part of the chicken is used, i.e. breast. The preparation of the breast must be treated with special attention, otherwise you can simply dry it out, then the salad will be dry and not tasty. Chicken salad is perfect for a festive table and will definitely not leave guests hungry, because chicken is a very satisfying ingredient.
It is necessary
- - 250-300 g of boiled chicken
- - 230 g mozzarella cheese
- - a bunch of romaine lettuce
- - 2 large sweet peppers
- - 300 g olives
- - 7 slices of white bread
- - 1, 5 Art. l. unrefined olive oil
- - 200 ml wine vinegar
- - 3 tsp mustard
- - 150 g onions
- - 50-70 g of black freshly ground pepper
- - 60-70 g sugar
- - 50 g salt
Instructions
Step 1
Preheat the oven to 185 ° C. Cut the crust off the bread, cut the crumb into 1, 5 cm cubes. Place baking paper on a baking sheet. Add pieces of bread, pour with olive oil and a little salt, stir.
Step 2
Put the baking sheet in the oven and fry the croutons until golden brown, 7-9 minutes. Stir several times during frying so that the bread cubes are evenly fried, cool.
Step 3
Put the bell peppers in the oven and bake for 8-10 minutes. Transfer to a cup and cover, leave for 13 minutes. Then peel the peppers and remove the seeds. Cut the pepper into thin slices.
Step 4
Peel and finely chop the onion. Place some vinegar, mustard, salt, sugar and pepper in a cup. Pour olive oil on top, beat the dressing well with a blender until it emulsifies. Add onion and stir.
Step 5
Chop the boiled chicken and place in a salad bowl. Add cheese and pour over half the dressing. Marinate for 10-13 minutes.
Step 6
Cut lettuce leaves into small pieces and add to a cup with chicken and cheese. Add pepper slices, olives and cooked dressing and stir. Sprinkle with croutons before serving.
