Step 1

Cut the slightly frozen bacon into narrow strips up to four centimeters wide. To prevent the product from clinging to the knife, pre-sharpen and cool the tool well.

Step 2

Salt the chopped pieces well and rub heavily with pepper or a prepared mixture of peppers. It is recommended to take coarse salt, but the pepper should be fine.

Step 3

Crush the cloves of garlic with a knife or special tool and rub the sides of each piece of bacon with it. Make slits in the bacon up to 0.5 cm and put a couple of broken bay leaves in them.

Step 4

Put the resulting blanks in the refrigerator and leave overnight. During this time, the bacon will have time to absorb all the spices and the aroma of bay leaves. Be sure to cover the bacon, otherwise it will absorb the smell of the refrigerator along with the aroma of spices.

Cook lard in a double or slow cooker. If you don't have a regular steamer, that's okay. Dip the pieces into a colander, which, in turn, place in a pot of water (here is a double boiler) so that the colander does not touch the surface of the water. Put the saucepan on the fire, bring to a boil and leave for at least 40 minutes. This time will be enough for a tender and soft fat. However, if you took hard pieces, then it is better to cook for an hour, or even two.

Check the readiness of the bacon with a fork: the bacon is ready if the bacon is easily pierced. take out the dish and let it "rest" on a coarse cloth (for example, fold the bacon on a waffle towel). Garnish with fresh herbs, you can add a little chopped garlic and serve with brown bread.
