It is much more difficult to choose high-quality lard. The first meat product that comes across will definitely not work. You need to take white or slightly pinkish bacon. Salt lard in brine
Salted lard according to this recipe turns out to be very fragrant, tender, melts in the mouth. It is better not to limit yourself and take a large piece of bacon at once. It will definitely not lie, it will be eaten instantly.
Ingredients:
- fresh lard;
- 2 heads of garlic;
- 1 l. water;
- 4 tbsp. l. salt;
- 6 bay leaves;
- 1 tsp black peppercorns;
- 10 allspice peas.
Cooking instructions
- Pour warm water into a saucepan. Add salt, bay leaves, black pepper and allspice. Put the future brine on the stove. Bring the liquid to a boil. Cook for 3 minutes.
- Cool the brine to room temperature.
- After that, you need to check if there is enough salt. You don't need to taste the brine. You can dip a clean chicken egg into it. If it floats, the salt is just right. The egg sinks - there is little salt.
- It is necessary to prepare the fat. It is important to scrape the skin with a knife under running water. This will remove all the dirt.
- Dry the bacon with a paper towel.
- Cut the bacon into large pieces.
- Peel the garlic. Cut the cloves into thin slices.
- Put some of the garlic on the bottom of a clean jar. Top - pieces of bacon.
- Fill the jar so that there is garlic between each layer of bacon.
- Pour lard with brine with spices. Close with a nylon lid. Leave the jar at room temperature for two days. After that, you need to send the container to the refrigerator for another 2 days.
