Tomato soup with zucchini is a fairly simple and light dish that even an inexperienced housewife can cook, especially since it will take very little time. Half an hour and your lunch is ready!

- - 6 large red sweet tomatoes
- - 1 tbsp. orange juice
- - spices and herbs
- - 1 tbsp. tomato paste
- - 2 tbsp. cane sugar
- - 1 zucchini, about 350-400 g
- - parsley
- - 1 tbsp. cream, not less than 33% fat
Instructions
Step 1
Wash the tomatoes, cut them crosswise, pour over boiling water and carefully separate the skin from the pulp. Cut the tomatoes into small pieces. Put the prepared tomatoes in a saucepan, pour in the orange juice, bringing the mixture to a boil.
Step 2
Season with salt and season with freshly ground black pepper, pour in a liter of cold water, add tomato paste and brown sugar. Simmer over medium heat for about 10-12 minutes. Wash the zucchini, remove the stem and cut into cubes. If the zucchini skin is rough, peel it too.
Step 3
Place the chopped vegetables in a saucepan and cook until tender, about 12-15 minutes. Wash the parsley and chop finely. Pour the cream into the soup, stir well and remove from heat, without bringing the finished dish to a boil. Garnish the soup with chopped herbs when serving.
