A very tender and airy roll is an excellent appetizer for a festive table.
It is necessary
- For minced meat:
- - trout - 200 g;
- - eggs - 4 pcs.;
- - cream - 80 ml;
- - hard cheese - 50 g;
- - salt and pepper to taste.
- For filling:
- - avocado - 2 pcs.;
- - smoked trout - 100 g;
- - curd cheese - 100 g;
- - dill - 1 bunch.
Instructions
Step 1
Make minced fish. To do this, separate the trout fillets from the bones. Boil it. Mash the finished fish with a fork, trying to get a more or less homogeneous mass.
Step 2
Separate the yolks from the whites and add them to the fish. Whisk the whites into a foam and add cream to them in a thin stream, without stopping whipping. Grate the cheese. Add the whipped egg whites and half of the grated cheese to the minced fish. Season the mixture with salt and pepper. Mix the minced meat thoroughly.
Step 3
Place parchment paper on a baking sheet. Spread the minced meat evenly. sprinkle with the remaining cheese. Preheat the oven to 200-220 degrees and bake the fish in it for 10 minutes.
Step 4
While the fish is baking, prepare the filling. Cut the smoked trout into small pieces. Remove the pit from the avocado, peel the fruit. Mash the pulp with a fork. Wash the dill, shake it and chop it. Combine curd cheese, avocado, dill, and smoked trout.
Step 5
Cool the baked fish mass a little (it should be warm, but not cold). Turn over and remove the parchment paper. Spread the filling evenly over the surface. Roll up the roll, cut into portions and serve.
