There are quite a few options for making curry sauce. It can be spicy, sweet and sour, and contain various additional ingredients. Since a variety of fruits go well with chicken, this recipe uses pineapple as well as cream to add flavor to the dish.

It is necessary

  • - 600-700 g of chicken meat;
  • - 4-5 cloves of garlic;
  • - 3 peas of allspice;
  • - large onion;
  • - 3 tbsp. tomato paste;
  • - about 120 ml of water or chicken broth;
  • - 70 g of canned pineapple;
  • - 1-2 tbsp. canned pineapple syrup;
  • - 2 tbsp. cream;
  • - 3-4 tbsp. vegetable oil (better than unrefined sunflower oil, but can be replaced with olive oil);
  • - 1 tbsp. seasoning curry or ready-mixed chicken;
  • - fresh herbs (to taste; this ingredient can be excluded);
  • - hot hot peppers (to taste; this ingredient can be excluded)

Instructions

Step 1

Prepare chicken meat: chop or cut into portions, remove skin, films. Large bones can be left, but small (especially fragments) must be removed. Wash and dry. Salt. Peel the garlic, crush on a board with a knife and chop very finely (or pass through a garlic press). Grind allspice in a mill, mix with garlic and grate chicken well. Place in a food bag and refrigerate for 2 hours.

Preheat a frying pan, pour in vegetable oil. Lay out the meat and fry on all sides for 3-4 minutes. Reduce heat, cover (not completely) and cook over low heat until tender (~ 30 minutes). When done, place in a bowl.

Step 3

Peel the onions, chop finely and save (i.e. fry over low heat) in the oil left over from frying the meat. Add curry, stir. Dilute the tomato paste with broth or water (the amount of liquid depends on the tomato paste and the desired consistency of the sauce), pour over the onion. Simmer for 5 minutes.

Step 4

Chop the pineapple very finely and add together with the syrup to the sauce, stir. Determine the exact amount of syrup to your liking: the sugar should balance the acidity of the tomato paste. When you get the required ratio, pour in the cream and simmer for another 5 minutes. If you want to make the sauce spicy, add just the right amount of finely chopped hot peppers.

Step 5

Place the chicken pieces in the sauce, set the heat to low, cover and simmer for 20 minutes.

Step 6

Place the chicken on plates, top with the sauce. As a side dish, you can serve rice, potatoes, pasta, fresh vegetable salad.
