Spicy salad with smoked chicken breast and pineapple

Ingredients:

- 300 g smoked chicken breast;

- 150 g fresh pineapple;

- 1 small red bell pepper;

- 100 g of canned corn (without liquid);

- 150 g of iceberg lettuce;

For refueling:

- 2 tbsp. lemon juice;

- 4 tablespoons vegetable oil;

- 1/4 tsp salt;

- a pinch of ground black pepper.

Wash the lettuce leaves, pat dry with a paper towel and tear with your hands. Cut off the stalk of the bell pepper, clean out the seeds and cut the vegetable into narrow strips. Add prepared ingredients, corn kernels in one bowl and mix gently. In a separate bowl, combine lemon juice, vegetable oil, salt and pepper, whisk and pour over the vegetable platter.

If you are using canned pineapple instead of fresh pineapple, drain the sweet liquid completely and squeeze the fruit rings lightly.

Cut the smoked chicken breast into small, even cubes. Heat a grill or skillet over high heat and brown pineapple half rings until golden brown on both sides. Place grilled fruit slices and white poultry meat on top of your previously prepared salad.

Hearty Smoked Chicken Salad with Pineapple

Ingredients:

- 1 smoked chicken leg;

- 1 small can of canned pineapple (250 g);

- 2 tomatoes;

- 125 g of long grain rice;

- 2 tbsp. mayonnaise;

- a pinch of ground black pepper;

- salt.

Rinse the cooked rice under cold running water to keep it crumbly, or take the steamed cereal straight away. This is important for both the texture of the salad and its flavor.

Pour twice as much water over the rice in a small saucepan and cook until tender. Strain the pineapple syrup and chop. Remove chicken from bones and chop finely. Cut the tomatoes into quarters and then into cross-sectional triangles. Combine all the components of the salad, season with pepper and salt to taste and mix thoroughly with mayonnaise. Let the dish sit for at least an hour.

Simple Layered Smoked Chicken Salad with Pineapple

Ingredients:

- 1 smoked chicken breast;

- 300 g fresh or canned pineapple;

- 120 g of hard cheese;

- 100 g of walnut kernels;

- 3 tbsp. mayonnaise.

Finely chop the smoked breast and pineapple pulp. Heat the walnuts lightly in a mortar. Grate the cheese. Collect the salad on a common or portioned plate, layering the food in layers and spreading mayonnaise in the following order: chicken, pineapple, nuts. Cover the dish with grated cheese, as your imagination dictates.
