It is necessary

    • 1.5 kg of seafood;
    • 200 ml of cream with a fat content of 25%;
    • 2 teaspoons of ketchup
    • 50 g butter;
    • 2 tbsp flour;
    • 3 servings of pasta;
    • 200 g parmesan cheese;
    • a handful of peeled pine nuts.

Step 1

The seafood platter is usually sold frozen. Therefore, the first step is to melt the ice. Never defrost the platter in the microwave. Heating there is uneven, and you can simply spoil the product without even starting to cook. In general, cooking squid, shrimp, octopus is a very delicate process. An extra minute of heating can turn tender meat into rubbery and absolutely tasteless. So, to defrost the assortment, you need to put it in a colander and pour it over with lukewarm water. After 15-20 minutes, there will be no ice left. Let the water drain.

Step 2

In the meantime, you can start preparing for frying. Preheat a frying pan, melt 50 g of butter. Put the seafood in a hot skillet. In the first minutes, the platter will give a lot of water. Once this happens, remove the skillet from the heat and gently pour the liquid into the mug. It will come in handy later. The less water left in the pan, the better.

Step 3

Put the seafood back on the fire. Once all the water has evaporated, start stirring. You need to fry the seafood for 2-3 minutes. Then pour the cream into a skillet, stirring constantly. Add 2 teaspoons of ketchup. Stir.

Step 4

Take 2 tablespoons of flour and fry in a hot skillet for 2 minutes. Gradually add the fried flour to the seafood, let it simmer for about five minutes. Do about the same with pine nuts: they are fried in a hot pan until golden or light brown. Mix everything.

Step 5

Grate the cheese on a fine grater. It is better to choose a creamy, hard cheese for this pasta. Boil the pasta in the amount of three servings.

Step 6

Start serving. Top with the hot pasta, top with the resulting creamy pine nut sauce and place the seafood on top. And after that, the final touch - sprinkle with finely grated cheese.
