Soup made from rice is the best choice for feeding a family at lunchtime. The fragrant, rich soup will surely become a lifesaver for busy mothers and working housewives. After all, this dish does not require special financial costs, and the products that make up it are often always found in the refrigerator.

It is necessary

  • - meat (chicken breast or beef brisket) - 500 g;
  • - rice - 250 g (a little more than 1 cup);
  • - large onions - 1 pc.;
  • - carrots - 1 pc.;
  • - medium-sized potatoes - 3 pcs.;
  • - ground black pepper;
  • - bay leaves - 3 pcs.;
  • - salt;
  • - sunflower oil - 2 tbsp. l.;
  • - fresh dill and / or parsley (optional).

Instructions

Step 1

Rinse poultry or beef under running water and lower it whole into a saucepan. Collect 3 liters of cold water and place on the stove. After boiling, remove the resulting foam, cover with a lid and reduce the temperature to a low value.

Step 2

If you have beef, then the cooking time is about 2 hours. If chicken, then about 40 minutes. Therefore, depending on what kind of meat you have chosen, you need to count down the time when to start the next stage of making the soup.

Step 3

Transfer the rice to a bowl 30 minutes before the end of cooking the meat and rinse it several times until the water is completely clear. After that, pour the cereal into a saucepan, bring to a boil, and then lower the temperature to a minimum.

Step 4

Peel and rinse all vegetables - potatoes, onions and carrots. Cut the potatoes into cubes, the onions into thin quarter-rings, and the carrots into small cubes. Immediately send the potatoes to the saucepan with meat and rice. And from carrots and onions we will make a fry.

Step 5

Take a frying pan and pour sunflower oil into it. When it's warmed up, transfer the onion to a skillet and fry until transparent. Then toss in the carrots and fry them with the onions until golden brown. Add black pepper and stir. After that, the pan can be removed from the stove - the frying is ready.

Step 6

5-10 minutes before the end of the rice soup, add the fry, bay leaf, and salt to taste in a saucepan. Then remove the lid from the pot and cook until the end of the allotted time.

Step 7

Pour the prepared soup into portions, in each of which put a piece of meat and sprinkle with fresh chopped herbs (parsley, dill). Serve the dish to the table with bread crumbs or fresh bread, as well as pickles or vegetable salad.
